After several years of study on foods in Tokyo, Yuki Aoyama, the owner of AOYA, decided to start a restaurant offering daily & healthy meals of obanzai, a traditional style of Japanese cuisine native to Kyoto, where she was born and raised up. After she left her home, she realized that Kyoto has a unique dietary culture which combines influences from Buddism and Chinese food therapy, and it produces obanzai. Ingredients, including traditional vegetables of Kyoto, are carefully selected and in season rooted in an idea of obanzai in which the best meals are given by nature season to season.
